Almond Flour Brownies with Red Orange Zest

INGREDIENTS 

3 large brown eggs

1 cup coconut sugar

1/3 cup almond flour

2tbsps coconut flour

2tbsps cocoa powder

2tbsps room temperature water

1tsp vanilla extract

Zest of 1 Red Flesh Orange

7oz dark chocolate- chopped and divided

1/2 cup + 2tbsps EVOO

 

DIRECTIONS

STEP 1

Preheat oven to 350 degrees

 

STEP 2

Combine the eggs and coconut sugar in a dowl with a stand mixer. Beat on high until the mixture becomes light and fluffy- about 4-5 minutes. Add the almond flour, coconut flour, cocoa powder, water, vanilla, and orange zest and mix until JUST combined- do not overmix.

 

STEP 3

Heat 5oz of dark chocolate and the olive oil in a double boiler, stirring constantly until melted. Add the melted chocolate to the batter and mix until just combined. Add the remaining 2oz chocolate and fold it into the batter. 

 

STEP 4

Line a 9x9 inch baking pan with parchment paper. Pour the brownie batter into the pan and gently spread evenly. Bake for 35-45 minutes until a toothpick comes out with moist crumbs. It is normal for the toothpick to have batter on it, but it should look like crumbs and not completely liquid. 

 

STEP 5

Transfer to a wire rack and allow to cool completely. ENJOY!
