Earl Grey Yogurt Cake

This coffee time dessert profiles the power of citrusy Earl Grey tea. I opt to use a high quality loose-leaf tea as it is much more fragrant and you won't need as much of it. If you choose to use tea bags, simply snip them open and measure out the tea inside.

Ingredients 

MAKES ONE 9X5" OR 8½X4½" LOAF 

1 cup vegetable oil, plus more for pan 2 cups (250 g) all-purpose flour 1½ tsp. Diamond Crystal or 1 tsp. Morton kosher salt ½ tsp. baking powder ½ tsp. baking soda 2 large eggs 1¼ cups (250 g) granulated sugar 1 cup plain whole-milk yogurt 3 Tbsp. loose-leaf Earl Grey tea or ¼ cup tea from bags 2 tsp. vanilla extract 1tbsp. raw or granulated sugar

 

 

Step 1

Preheat oven to 325° and lightly coat a 9x5" or 8½x4½" loaf pan with vegetable oil and line with parchment paper. Leave overhang on long sides.

 

 

Step 2

In a medium bowl, combine and whisk 2 cups [250 g] of all-purpose flour, 1 1/2 tsp of diamond crystal or 1tsp of Morton kosher salt, and 1/2 tsp of baking poweer and 1/2 tsp of baking soda.

 

 

Step 3

Whisk 2 large eggs and 1¼ cups [250 g] of granulated sugar in a large bowl for exactly 1 minute; mixture should look pale yellow and frothy. Whisk in 1 cup plain whole-milk yogurt, 3 Tbsp. loose-leaf Earl Grey tea [or ¼ cup tea if you are using bags), and 2 tsp. of vanilla extract.

 

 

Step 4

Slowly and gradually add in 1 cup of vegetable oil and whisk constantly until incorporated. Add the dry ingredients and whisk to combine. Scrape the batter into the pan and smooth top of loaf. Gently tap pan against counter to eliminate any air bubbles that may have formed.

 

 

Step 5

Evenly sprinkle top of batter with 1 tbsp of raw or granulated sugar. Bake the loaf until a skewer or toothpick inserted into the center comes out clean, for about 1 hour.

 

 

Step 6

 

Let the loaf cool for 15 minutes before running a butter knife between the loaf and pan to release. Lift loaf out using the parchment overhang and transfer to a wire rack. Enjoy with your favourite cup of coffee or tea!
