Rosemary Mezcal Fizz

To achieve the most luscious froth, serve this drink in a tall glasses WITHOUT ice. Make sure your sparkling water and glasses are chilled before starting. Salute!

Ingredients

MAKES 2

40 rosemary leaves (from 1 sprig)

Pinch of kosher salt

1 large egg white*

1 3"-long strip lemon zest

4.5 oz. mezcal

2.75 oz. fresh lemon juice

1.5 oz. light agave nectar

6oz. chilled sparkling water

2 sprigs rosemary

 
 
 

Preparation

 

Step 1

Chill 2 tall glasses. Combine rosemary leaves and salt in a cocktail shaker and gently press out oils with a muddler or kitchen hammer for about 45 seconds. Add egg white, lemon zest, mezcal, lemon juice, and agave. Shake shaker vigorously (without ice) until egg white is emulsified, for about 20 seconds. Carefully uncover and add ice just to fill- WARNING: Shaker will be full so handle with caution. Cover and shake until egg white is very frothy and cocktail is cold, about 30 seconds.

 

 

Step 2

Set CHILLED glasses next to each other and double-strain cocktail into glasses. Top each drink with club soda and garnish with a rosemary sprig. SALUTE!
