INGREDIENTS

500g Almond Meal

300g caster sugar

5 egg whites

1.07oz almond essence

Bowl of icing sugar

 

DIRECTIONS

STEP 1

Separate 5 egg whites into a medium mixing bowl and whisk them well. Once lots of bubbles start to form, add the almond essence and whisk gently until well combined.

 

STEP 2

Mix together the almond meal and caster sugar in a separate bowl until well combined. Pour the egg white mixture into the bowl with the dry ingredients and mix through using a large spoon.

 

STEP 3

Use your hands to combine and mix the dough thoroughly and let rest for one hour or overnight in the fridge.

 

STEP 4

Prepare a large flat baking try lined with parchment paper and heat oven to 350 F.

 

STEP 5

Using a tea spoon, scoop a heaping amount of mixture and roll in the palm of your hand into a ball. Place the ball gently into a bowl of icing sugar and roll gently. Repeat.

 

STEP 6

Gently place the balls onto the baking tray, lining them up at least 1.5 inches away from each other.

 

STEP 7

Once the tray is full, lay your hand flat and press down gently on each ball to make the tops flatten. This will create some cracks and provide the perfect form for your amaretti

 

STEP 8

Dust with another small sprinkle of icing sugar all over before placing in the oven for about 15 minutes. Let cook and ENJOY!
