Pardon my pun but this recipe is anything bundt boring. Harmonious flavors of blood orange, orange bitters, and bourbon take make this cake unresistibly sinful.
INGREDIENTS
[SERVES 8 TO 10]
FOR THE CAKE
Butter, for greasing
4 blood oranges
1/4 cup fresh lemon juice
2 cups all-purpose flour, plus extra for dusting pan
1/2 almond meal
1 1/2 tsps baking powder
1/2 tsp baking soda
1 1/2 tsps kosher salt
5 large eggs
1 3/4 cups granulated sugar
3/4 cup extra virgin olive oil
1/2 cup plain Greek yogurt
2 tbsps bourbon
FOR THE GLAZE
1 1/2 cups confectioners sugar
3 tsps fresh blood orange juice
2 tbsps fresh lemon juice
1 tbsp bourbon
6 drops orange bitters
1 tsp blood orange zest
STEP 1
Preheat oven to 350 F. Generously grease a 12-cup bundt pan with butter and dust with flour.
STEP 2
Grate the zest of 3 blood oranges and squeeze 1/2 cup juice- use the fourth orange if necessary. Combine the orange and lemon juices together.
STEP 3
In a small bowl, whisk together flour, almond meal, baking powder, baking soda, and salt until combined.
STEP 4
In a stand mixer, beat eggs on medium-high speed until frothy and evenly coloured. Slowly and gradually add granulated sugar and beat until mixture is thick and fluffy- about 3 minutes. Lower mixed speed to low and add flour and oil gradually. Add yogurt, bourbon, orange juice, and lemon juice mixture, and orange zest until everything is incorporated.
STEP 5
Pour the batter into the pan; leave about 1 inch between the batter and the top of the pan. Bake for 25 to 40 minutes or until a knife or toothpick comes out clean. Transfer cake to a wire rack and allow to cool for about 15 minutes before unmolding and cooling completely on rack.
STEP 6
In a medium bowl, sift confectioner's sugar through a sifted to remove lumps. Whisk in the blood orange juice, lemon orange juice, bourbon and bitters. Stir in the orange zest. Add more sugar if the glaze is too runny; if glaze is too thick, add more juice.
STEP 7
Wait for cake to completely cool and drizzle it generously with the glaze and transfer to a serving plate. ENJOY!
