Chocolate & Pistachio Tarte

INGREDIENTS 

FOR THE CRUST:

6oz chocolate wafer cookies 

1 1/2tbsp melted coconut oil

 

FOR THE FILLING:

1 cup pistachios- soaked & drained

1/3 cup macadamia nuts- soaked & drained

1/4 cup unpasturizeed honey

1/3 cup macadamia or oat milk

2tsp coconut oil

1/8tsp sea salt

 

FOR THE GANACHE:

3.5oz sea salt dark chocolate 

6tbsps coconut cream

Cacao nibs- to serve

 

DIRECTIONS

STEP 1

Prehead oven to 325 degrees F. Pulse chocolate wafers & melted coconut oil in a food processor until finely ground. Press into a crust in a 7-inch tart shell and bake for 10 minutes. Set aside to cool.

 

STEP 2

Combine all the filling ingredients into a food processor and blend until smooth and creamy. Pour the filling into the tart shell and smooth top with spatula. Set in the fridge to chill.

 

STEP 3

For the ganache- heat coconut cream at a simmer in a small pot. Remove from heat and add half of the chopped sea salt chocolate, stir to melt. Add the remaining chocolate and stir until the ganache is smooth

 

STEP 4

Pour ganache over the pistachio cream filling and garnish with cacao nibs. Chill until set-about 1 hour. ENJOY!
