Delicious Peach Melba

INGREDIENTS 
8 ripe peaches

2 ripe peaches chopped into small pieces

2tbsps sugar

1tbsp cornstarch

1tsp vanilla extract 

[FOR PEACE SWIRL ICE CREAM]

1/2 cup peach puree

1/2 gallon vanilla bean ice cream

[FOR CROQUANT]

1 cup sugar

1tsp corn syrup

1 cup almonds

A pinch of salt

 

DIRECTIONS

PREPARE THE PEACHES:

Peel 8 peaches by cutting a cross in the bottom and poach in boiling water for 1 minute before transferring to ice water. The skin will begin to peel away with ease; pit the peaches with a paring knife. The peaches can be peeled and pitted 1 day in advance and stored in the fridge. 

 

PREPARE THE PEACH PUREE

1. Cut up 2 peaches and cook with half of the sugar over medium heat until the juices begin to release. Puree the peaches with an immersion blender. 

 

2. Mix the remaining sugar and cor starch together. Add it to the pureed peaches and cook until bubbling starts- about 3 minutes. Powering in a bowl, cover, and keep in the fridge. 

 

PREPARE THE ICE CREAM DISKS

1. Soften the ice cream and press into a 9x13-inch cake pan lined with parchment paper. Swirl 1/cup of peach puree into the ice cream.

2. Allow freezing for a minimum of 4 hours. This can be done a day or two ahead. Use a round cookie cutter and stamp out a circle of ice cream that matches the dimensions of the peaches- keep frozen until ready to serve. 

 

PREPARE THE CROQUANT 

1. Place the sugar in the center of a small pot and add corn syrup and 1/4 cup of water. Heat on high until the mixture begins to turn an amber colour on the sides of the pan. Stir in caramel and allow to smoke slightly, remove from head and add the almonds and salt. 

2. Pour the mixture onto a baking sheet lined with buttered parchment paper. Allow to cool completely and then break up the croquant and pulse in a food processor until it is in small pieces. 

 

PREPARE THE FILLING

Fold whipped cream, peach puree, and croquant together. Place the mixture into a large piping bag and fill with a large round pastry tube- use to fill the prepared peaches. This step can be done hours or 1 day in advance. 

 

ASSEMBLY 

1. Freeze dishes that you would like the peaches to be served on- this will prevent the ice cream from sliding on the plate. Set down the ice cream round, then the filled peach and sprinkle crushed croquant on top. You can serve with more of the peach puree, drizzled over or on the side of the plate.

 

2. Depending on the peach size, you can serve whole or cut them in half- ENJOY!
