Niagara Whole Peach Cobbler With Brioche Cinnamon Crumbs

INGREDIENTS 

[MAKES 8-10]

8 to 10 Niagara peaches 

1 stick salted butter, cubed 

1 cup brown sugar

1tbsp vanilla extract

2tbsps bourbon 

FOR CINNAMON CRUMBS

4 slices of brioche bread- torn or pulsed into 2 cups of fine crumbs

4 tbsps salted butter, melted

5tbsps cinnamon sugar 

 

INSTRUCTIONS

STEP 1

Preheat over to 350 degrees F. Arrange the peaches in a large baking dish and sprinkle with brown sugar and butter. Add vanilla and bourbon. 

 

STEP 2

Bake for 1 to 1 1/2 hours, or until peaches have softened and the vanilla bourbon sauce is bubbling up around the peaches. 

 

STEP 3

While the peaches bake, make the cinnamon crumbs by tossing brioche breadcrumbs, melted butter, and cinnamon sugar together on a baking sheet. Bake for 10-15 minutes or until toasted- monitor to make sure that they do not burn. 

 

STEP 4

Remove peaches from the oven and discard pit if possible. Serve with vanilla bean ice cream and a generous sprinkle of cinnamon crumbs. ENJOY!
